Guacamole

Guacamole in its most basic form is ripe avocados mashed into a creamy condiment with a little salt. Lime juice is added to round out and brighten the flavor. We like to add jalapenos for a touch of warmth along with diced white onion and garlic to add savory flavors that help meld all the other flavors. Cilantro adds an herbaceous, typically Mexican note to the guacamole. If you don’t like cilantro feel free to omit it.
Traditionally made in a lava stone molcajete, guacamole is just as easily made in a bowl using a fork or potato masher. If you’re in a hurry you can pulse everything in a food processor, but it’s very easy to over do it. Ripe avocados are easy enough to mash to a creamy consistency with just a fork. A potato masher makes it even easier.

Guacamole Recipe
3 large, ripe avocados
2 jalapenos, seeded and diced
1/2 white onion, diced
1 clove garlic, finely diced
3-4 tablespoons chopped cilantro
1 lime, cut in half
Pinch of salt.
Cut the avocados in half lengthwise and remove the pits. Scoop the flesh into a bowl.
Mash the avocados with a fork or potato masher until there are some small chunks left, but the mixture is mostly smooth.
Stir in the jalapenos, onion, garlic, and cilantro.
Squeeze half the lime over the guacamole and add a pinch of salt. Stir and taste for seasoning.
If the guacamole needs it, squeeze the other half of the lime into it and stir.
Guacamole and chips is a natural combination. The cool and creamy guacamole is a perfect counterpoint to a crunchy tortilla chip.
Guacamole has so many more uses than just a dip.
Try it on toast for a Mexican twist on avocado toast. Guacamole makes a great burger topping too. It makes a great topping for our Everything Nachos, and is a natural condiment for tacos.
