Pumpkin Spice White Russian

The classic White Russian cocktail gets an autumnal makeover with pumpkin and warm pumpkin spices. By making an infused cream you get the silkiest drink. Fresh ginger rounds out the cinnamon better than dried, just be sure the cream is simmering before you add it. Pumpkin puree adds a touch of pumpkin flavor and lightly tints the cream. The orange sugar rim adds seasonal color and a touch of sweetness to the infused cream.

Use any leftover pumpkin spice cream in coffee, milkshakes, drizzled over cake – anywhere you want a hint of fall flavors.

Pumpkin Spice White Russian Cocktail Recipe

2 ounces vodka
1 ½ ounces Kahlúa
2-3 ounces pumpkin spice infused heavy cream
Garnish: cinnamon stick, fresh grated nutmeg, orange sanding sugar

In an orange sugar rimmed double old fashioned glass half filled with ice;
Add the vodka and Kahlúa.
Top with the pumpkin spice heavy cream and stir.
Garnish with a cinnamon stick and a few gratings of fresh nutmeg.

To sugar the rim of the glass:
Pour sugar into a small plate to cover the bottom of the plate.
Wipe the rim of the glass with a paper towel dampened with some of the cream, then dip the rim of the glass into the sugar to coat the rim with sugar.

Pumpkin Spice Infused Cream Recipe

Pint heavy cream
4 tablespoons pumpkin puree
4 cinnamon sticks
2 inch piece of fresh ginger, peeled and chopped.

Add pumpkin and cinnamon to small saucepan, bring to a gentle boil, add the chopped ginger and simmer for 10 minutes, cover and remove from heat, let infuse 20 minutes.

Strain and refrigerate in a covered container.

Important! Fresh ginger has an enzyme that will curdle the cream. The enzyme is deactivated through cooking, so always add the fresh chopped ginger after the cream has come to a gentle boil.

Any leftovers can be used anywhere you want a warm autumn flavor. This makes a great creamer for coffee, add a bit of sugar if you want it on the sweet side. Keeps about two weeks covered in the refrigerator.
